Siena has a great culinary tradition. Tastes coming from faraway. During a tour of the city centre, but in the countryside too, it is very easy to find places to taste wine. A glass of Brunello or a Chianti, a Vernaccia or a Rosso di Montalcino or a Nobile di Montepulciano. And then, looking around, ravished by fragrances, you are tempted by cheeses with jams and honey. Or by various kind of cold meats and salami. Or simply by a slice of bread with olive oil. Very old genuine tastes. All these products are protected by a brand that guarantee the production and the distribution. The Cinta Senese’s salami and ham, for example, have the typical taste of the country all around Siena. The Cinta Senese is a pig breed typical of the area, present only in Siena’s country since the Middle Ages. It is a little black pig with a white stripe over the shoulders; it has been represented in the Museo Civico Museum in Siena, Piazza del Campo, in the Good Government frescos of the 14th century by Ambrogio Lorenzetti. This little pig is rear wild only here, in Siena. A course made up of Cinta Senese’s salami and ham, bruschetta and cheese is a good hors d'oeuvre that could be followed by a good handmade pasta like Pici (flour and water) with tomato sauce and olive oil or Pappardelle, with mushrooms or meat. Soups are very good: Pappa al pomodoro (bread with tomato, garlic, basil and olive oil) or Ribollita soup (vegetable soup, especially black cabbage, carrots, onions and celery).
The most requested second courses, obviously, beef steaks; steaks with chicory, ribbon and sirloin. Queen of the restaurants is the Fiorentina Steak. The Fiorentina served in our restaurants is very good quality meat, almost exclusively Chianina breed, with a very high protein content, low cholesterol, calories and fats level. Valuable meets protected by brands that guarantee origin. The Fiorentina Steak, but in general all roasted meats, the red wines of Siena’s Province are very good, like Chianti, Brunello and Nobile di Montepulciano.
